Why You Should Use Mayo on Your Grilled Cheese

If there is such a thing as a universally beloved food, a grilled cheese sandwich is definitely a contender for the title. While you probably already have a favorite way to prepare one, there’s an expected condiment that could make it even tastier.

According to America’s Test Kitchen, you should be using mayonnaise to cook your grilled cheese.

Butter is generally the go-to when frying the bread for grilled cheese, and it’s a perfectly acceptable (and delicious) option. However, it can be tricky to use if you don’t plan ahead. You’ll need it softened in order to spread it over your bread before cooking, and sometimes, you just don’t have time to wait. Enter: mayo.

Like butter, mayo is a fat, and that’s what helps to make your bread golden brown and crispy, but the fat comes from oils. The condiment also has sugar, protein from egg yolks, and a bit of acid to give it markedly more flavor than regular old butter.

As for how to use mayo, you’ll make the sandwich the same way you would with butter. Smooth a bit of mayo over one side of each piece of bread. Then, place it mayo side down in your skillet. Sprinkle your grated or sliced cheese on the bread and cover with a lid to melt. Place one piece on top of the other (cheese side down), press down with a spatula or lid, and enjoy.
