I have to tell you guys, I’m an Almond Joy monster. When Livi gets Almond Joys on Halloween, she kindly shares her stash with me because she knows how much I love them. It was when I was eating one from our Halloween stash in the pantry – don’t judge lol – it made me wonder what was actually in them, and I decided I didn’t want to know.

Recently, I saw a bag of unsweetened coconut in the pantry and thought it would be fun to experiment with making my own.

The result: an Almond Joy bite that’s even softer and sweeter than the beloved fave, and makes an awesome little sweet treat minus the sugar crash.

First, I made my own dairy-free condensed milk with maple syrup and almond milk. I just simmered almond milk with maple syrup until it yielded thick, creamy goodness.

I added the mixture to unsweetened coconut with a little coconut oil and almond extract (<— key).

Rolled it into balls:

and after a quick trip to the fridge to set, I coated them in melted dark chocolate and put my beloved Skinny Dipped almonds on top. They were bomb dot com. Ingredients

3/4 cup almond milk

1/4 cup maple syrup

3 oz unsweetened coconut

2 tablespoons coconut oil

Small splash of almond extract

4 oz chocolate chips

Almonds for topping – I used Skinny Dipped

Instructions

  1. In a small saucepan, whisk the almond milk and maple syrup. Bring up to a boil, reduce the heat, and simmer for 30-40 minutes. Remove from heat and let cool to room temperature.
  2. In a large bowl, combine the syrup with coconut, almond extra, coconut oil, and mix well. Roll into 8 balls and set in the fridge to set for 15 minutes or so.
  3. In a glass bowl, add the chocolate chips and microwave for 30 seconds. Stir, and microwave in 15-second intervals, stirring in between each round, until the chocolate is smooth.
  4. Roll each ball in the chocolate and set on parchment paper. Top with an almond. Place them in the fridge to set and store covered in the fridge.

Notes

These would also be delicious with dried fruit, orange peel. candied ginger, or chocolate shavings on top.
